A handmade chocolate bar is one of the best Christmas gifts for the nearest and dearest because it combines love, likes, tradition and indulgence in a single package.

I have opted for home made bars with two chocolate mould of two different sizes and so two flavours and fillings. I went for a mix of dried cranberries with home made candied orange feel and sea salt flakes to balance distinctive tarty and sweet flavour. The second bar was a mega sized chocolate bar with Dubai like style in form of purchased pistachio cream. Then I have used the smaller mould again for just simple of mix consisting of nuts and raising with other dried fruit to use any last bit of the melted chocolate.

It’s a gift that appeals to all ages, fits seamlessly into the spirit of giving from small children to the grown ups, and offers joy  that lingers long after the holiday lights fade. The extra bonus, it is very easy to make it, cost less than any bought sweets, without any harsh chemicals and the options are endless.

Buy good chocolate moulds of your liking, otherwise opt for the ,bark’, but impossible to craft Dubai style chocolate bar.

Ingredients

  • 80 per cent and more dark chocolate, at least 250 g, but feel free use any milk chocolate (I have used Lidl as well as finding from Ralphs in the USA, I just eat only dark chocolate, I have no sweet tooth and it is healthy and good for the mood as well as gut)

  • 1-2 overdone big tablespoons of cocoa butter (coconut oil will make it softer, optional) or lard (any vegetable fat, but lard makes it healthier and velvety texture)
  • ½ cup powdered sugar (or honey/maple syrup for natural sweetness)

  • add-ins: cranberries, candied orange peel, pistachio paste cream (diluted with little of boiled water for easy spreading),nuts, dried fruit, rice crisps, sea salt flakes etc, shortbread, pretzels, definitely not runny jam for soggy bum, sorry bottom, or any dried flower petals, definitely not daisies, for spitting it on you as no Thank you
  • optional – honey, maple syrup, sugar for extra sweetness, vanilla extract

  • Melt the base

    • Place cocoa butter (or coconut oil) or fat such as lard in a heatproof bowl.

    • Melt gently over a boiled water in the saucepan or directly in the saucepan if you have enough bravery. Do not use microwave in short bursts as it is still does not work nicely and burns the chocolate as well as fat.

  • Mix, stir, do not burn

    • Break chocolate bars into the smaller pieces and place them into the bowl.

    •  Stir until fully combined. Add any additional honey etc when you take the bowl out of the stove, Mix it properly.

  • Pour in and customise

    • Pour mixture into silicone mould. Fold in extras like my choice of cranberries, candied orange peel in, or play with other options such chopped almonds, raisins, or puffed rice for texture.

    • If you go for Dubai style chocolate bar, the bottom layer of chocolate mixture has to be solid for adding a layer of pistachio cream plus anything else.
  • Pour & set

    • Pour mixture into silicone moulds as the top layer to cover it up.

    • Tap lightly to remove air bubbles.

  • Chill

    • Place in the fridge for 1–2 hours until firm.
